Cooking Mama

 



I spent Christmas at my mom's in Pennsylvania, it was just me and her this year (plus my pup Amelie). I cooked a bunch of meals and my favorite part other then eating was plating! I made a number of dishes (all easy, and quick).. here was the menu - 

1. Turkey Stuffed Squash
2. Lemon Green Beans 
3. Apple Brie Corstinis 
4. Caprese Salad 
5. Pigs in a blanket (cheated, its pre-made from Trader Joes)
6. Cacio E Pepe (also cheated, pre-made from Trader Joes)

And to make it pretty, garnished it with Rosemary lol. This morning (first photo) I also made a quick dish I found inspiration from Pinterst, it was DELICIOUS. It's just toast with cottage cheese, avocado, red onion and sun-dried tomoatos. I'll probably make it again for dinner. 

And as always at the end of the year I always feel motivated to make some healthy lifestyle changes lol. I reactivated my classpass, which I'm excited to get back home and go to one. Especially a pilates reformer class, those always de-stress me. I was close to buying a Peloton, glad I didn't. The idea of exercising is always nice but when its time to actually do it, I want to stop. 

After cooking so much the past two days, I want to continue and make these quick, healthy meals. There is something special about filling your grocery cart with an bunch of beautiful greens. 

I'm blogging from my mom's office, with a big window beside me - I wish I had this kind of setup in my own apartment lol, it's so dark where I usually work at my dining table.
